There’s something about a one-pan dinner that just makes life easier.
Less prep. Fewer dishes. Big flavor. And, most importantly, a homemade dinner on the table without making the whole evening revolve around cooking.
These are seven of my favorite skillet dinners for busy weeknights. They’re cozy, flavorful, family-friendly, and simple enough to make when life is full.
Some nights call for comfort food. Some call for something fresh and colorful. And some nights you just need to throw dinner in one pan and call it good.
That’s where these recipes come in.
1. One-Pan Enchilada Skillet
Easy, cozy, and packed with hidden veggies — this is the perfect weeknight dinner when you want all the comforting flavors of enchiladas without the extra work of rolling each one individually.
It’s hearty, cheesy, and packed with ground beef, black beans, riced cauliflower, and plenty of flavor. It’s also easy to customize with whatever vegetables you have on hand.
Ingredients
- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 pound ground beef
- Salt and pepper, to taste
- 1 bag frozen riced cauliflower
- 1 can black beans, drained and rinsed
- 1 can Rotel, drained
- 1 can red enchilada sauce
- 10 corn tortillas, cut or torn into pieces
- 1 cup shredded cheddar cheese
- Optional add-ins: corn, diced zucchini, or green chilies
For serving: sour cream, sliced green onion, and chopped cilantro
Instructions
- Preheat oven to 350°F.
- Heat olive oil in a large oven-safe skillet over medium heat. Add diced onion and ground beef. Season with salt and pepper and cook until browned.
- Stir in riced cauliflower, black beans, and Rotel. Season with a pinch more salt and cook for 3–4 minutes.
- Pour in the enchilada sauce and let simmer for about 10 minutes to allow the flavors to come together.
- Smooth the mixture evenly in the skillet. Layer the torn corn tortillas on top, then sprinkle with shredded cheese.
- Bake for 20 minutes, until the cheese is melted and bubbly around the edges.
- Top with sour cream, green onion, and cilantro. Serve warm and enjoy.
2. Juicy Steak Fajitas
These are one of my favorite easy dinners when I want something flavorful, colorful, and fresh.
The secret is the orange marinade. Fresh orange juice adds a bright, slightly sweet flavor to the steak and helps make these fajitas incredibly juicy. After marinating, everything gets cooked in one hot skillet with peppers and onions until tender and slightly charred.
Ingredients
- 1–1½ pounds flank steak
- Juice of 1 orange
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon Italian seasoning
- 1 onion, sliced
- 2–3 bell peppers, sliced
- Olive oil, for cooking
- Salt, pepper, cumin, and chili powder, to taste
- Warm tortillas
Instructions
- Slice the flank steak against the grain.
- Add steak, orange juice, olive oil, salt, pepper, cumin, chili powder, and Italian seasoning to a bowl or bag. Mix well.
- Marinate for at least 4 hours, ideally overnight for maximum flavor.
- Heat a large skillet over high heat with a drizzle of olive oil. Add the onions and peppers and season with salt, pepper, cumin, and chili powder.
- Sauté until tender and slightly charred, then remove from the pan.
- Add the marinated steak to the hot skillet and sear on all sides until cooked to your liking.
- Add the peppers and onions back to the pan and toss everything together.
- Serve in warm tortillas with your favorite toppings.
3. Spinach Artichoke Chicken & Rice Skillet
This is one of those dinners that feels extra cozy without requiring a lot of effort.
Tender chicken, creamy cheeses, spinach, and artichokes are combined with rice and baked right in the skillet. It’s creamy, cheesy, comforting, and simple enough for a busy weeknight.
Ingredients
- 4 chicken breasts, diced
- Olive oil
- Salt, to taste
- 3 cloves garlic, minced
- 1 cup rice
- 1½ cups bone broth
- ½ cup ricotta cheese
- 1 (8-ounce) package cream cheese
- 1 jar chopped artichokes
- 1 bag chopped spinach
- Mozzarella cheese, for topping
Instructions
- Preheat oven to 350°F.
- Heat a little olive oil in a large oven-safe skillet. Add the diced chicken, salt, and minced garlic. Cook until the chicken is browned and cooked through.
- Add the rice, bone broth, ricotta, cream cheese, chopped artichokes, chopped spinach, and a little more salt.
- Stir everything together and let it simmer until bubbly.
- Top generously with mozzarella cheese.
- Bake uncovered for 25 minutes, or until the cheese is melted and golden brown.
- Let it rest for a few minutes before serving.
4. One-Pan Baked Ravioli
Think lasagna, but much easier.
This one starts with browned ground beef, onion, and marinara, then gets finished with a little heavy cream and spinach-and-ricotta ravioli. Everything bakes together under a blanket of golden mozzarella.
And the best part? That little trick of adding cream to the empty marinara jar, shaking it up, and pouring it into the skillet gets every last bit of sauce out.
Ingredients
- 1 pound ground beef
- 1 diced onion
- 1–2 teaspoons Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning or Golden Steer Table 40 blend
- 1 jar marinara sauce
- About ⅓ cup heavy cream
- 1 package spinach & ricotta ravioli
- Shredded mozzarella
Instructions
- Preheat oven to 350°F.
- Brown the ground beef in an oven-safe skillet and season with Italian seasoning or Table 40, garlic powder, onion powder, and Worcestershire sauce.
- Add the diced onion and cook until softened.
- Pour in the marinara sauce.
- Add about ⅓ cup heavy cream to the empty sauce jar, shake it up to get every last bit of sauce, and pour that into the pan.
- Let everything simmer together for a few minutes.
- Add the ravioli, tucking about half into the meat sauce and layering the rest on top.
- Cover with shredded mozzarella.
- Bake at 350°F for 25–30 minutes, until hot and bubbly and the cheese is golden.
5. Skillet Chicken Pot Pie with Homemade Buttermilk Biscuits
This might be the coziest recipe in the whole collection.
This skillet chicken pot pie has quickly become my son’s most-requested dinner, and I completely understand why. It’s cozy, hearty, and feels like the kind of meal that took all afternoon to make, but it really doesn’t. The homemade biscuits bake right on top of the creamy chicken and vegetable filling, making this the ultimate busy-night comfort food.
Ingredients
For the Chicken Pot Pie Filling
- 6 chicken thighs
- Salt and pepper, to taste
- Garlic powder, to taste
- 1 onion, diced
- 2 cloves fresh garlic, minced
- ⅓ cup butter
- ⅓ cup all-purpose flour
- 2 cups chicken bone broth
- 1 cup milk
- 1 teaspoon Italian seasoning
- 1 bag frozen peas and carrots
For the Homemade Buttermilk Biscuits
- 2½ cups all-purpose flour
- 2 tablespoons aluminum-free baking powder
- 1 teaspoon salt
- 2 teaspoons honey
- ½ cup very cold butter
- 1 cup cold buttermilk
Easy buttermilk substitute: Add 1 tablespoon vinegar to a measuring cup and fill with milk until you reach 1 cup. Let it sit for a few minutes before using.
Instructions
- Preheat oven to 400°F.
- Season chicken thighs generously with salt, pepper, and garlic powder. Heat a large oven-safe skillet over medium heat and cook the chicken until golden brown and cooked through. Remove from the skillet and chop into bite-sized pieces.
- Add the diced onion to the same skillet and cook until tender.
- Add the fresh garlic and butter. Once the butter melts, scrape up the browned bits from the bottom of the pan.
- Sprinkle in the flour and stir until everything is well combined. Cook for about 1 minute.
- Slowly pour in the chicken bone broth, stirring continuously. Add the milk and continue stirring until smooth.
- Bring the mixture to a gentle simmer and allow it to thicken. Add another pinch of salt and the Italian seasoning.
- Stir in the frozen peas and carrots, followed by the chopped chicken.
- Make the biscuits by combining flour, baking powder, salt, and honey. Cut in the cold butter, then add the buttermilk and mix just until a dough forms.
- Roll and fold the dough several times, then roll it out and cut into 12 biscuits.
- Arrange the biscuits over the chicken filling.
- Bake at 400°F for 20–25 minutes, until the biscuits are golden brown and cooked through.
- Let cool slightly and serve warm.
6. One-Pan Broccoli Chicken & Rice
The easiest kind of dinner: one pan, simple ingredients, lots of flavor, and a vegetable the whole family will actually eat.
Chicken thighs, creamy Boursin cheese, rice, broccoli, and cheddar all come together for a cozy dinner with very little cleanup.
Ingredients
- 6 chicken thighs
- Salt and pepper
- Italian seasoning
- 1 (5.2-ounce) block Boursin cheese
- 2 cups chicken bone broth
- 1 cup white rice, uncooked
- 1 bag diced broccoli florets
- 1½ cups shredded cheddar cheese
Instructions
- Preheat oven to 350°F.
- Season chicken thighs with salt, pepper, and Italian seasoning. Add to your braiser and cook until golden brown and cooked through.
- Remove the chicken from the pan and chop into bite-sized pieces.
- To the same pan, add the Boursin cheese and chicken broth. Stir until the cheese is melted and incorporated.
- Add the uncooked rice, followed by the broccoli. Season with a little more salt.
- Add the chopped chicken back into the pan and stir everything together.
- Top with the cheddar cheese.
- Cover and bake at 350°F for 15 minutes.
- Remove the cover and continue baking for another 10 minutes, or until the rice is tender.
- Let it rest for a few minutes before serving.
7. Creamy Ground Beef & Rosso Pesto Orzo
There’s something so satisfying about a dinner that feels special but comes together with minimal effort — and this one checks every box.
The Rosso Pesto brings a deep, tomatoey richness to the creamy orzo and ground beef, while spinach adds color and freshness and mozzarella ties everything together. It’s cozy, flavorful, and made entirely in one pan.
Ingredients
- 1 pound ground beef
- Salt, pepper, and Italian seasoning
- 1 clove garlic, minced
- 1 package of orzo
- 3–4 tablespoons Rosso Pesto
- 3 cups beef broth
- 1 cup milk or cream
- ½ cup shredded mozzarella
- 2 handfuls spinach
Instructions
- Brown the ground beef in a large skillet. Add salt, pepper, Italian seasoning, and garlic. Stir to combine.
- Add in the orzo and Rosso Pesto and stir to coat the orzo.
- Pour in the beef broth and bring to a boil. Reduce to a simmer, cover, and cook for about 20 minutes, or until the orzo is tender and most of the liquid is absorbed. Stir every few minutes to prevent sticking on the bottom.
- Stir in the milk or cream.
- Add the mozzarella and spinach and stir to combine.
- Cover and let sit for 5 minutes, until the cheese has melted and the spinach has wilted.
- Serve warm.
Why I Love One-Pan Dinners
There’s a reason skillet dinners show up so often in my kitchen.
They make homemade cooking feel doable.
You can brown your meat, build your sauce, cook your rice or pasta, add your vegetables, and finish everything in the same pan. Less cleanup means more time to actually sit down and enjoy dinner.
And that’s really what I love most about these recipes. They aren’t complicated for the sake of being complicated. They’re flavorful, cozy meals made for real life.
Because sometimes dinner is a full table with friends, and sometimes it’s three kids eating while someone is running out the door to an activity.
Either way, there’s something special about putting a warm skillet in the middle of the table and saying, “Dinner’s ready.”
