This High Protein Croissant Bake has rich, flaky croissants, a creamy egg texture, is full of flavor and packs extra protein. With only 10 minutes of prep time, it’s super easy to throw together, which is perfect on a busy school morning or when hosting a morning brunch. What’s not to love?! I like to serve it with a side of strawberries, raspberries, or any fresh fruit!

Ingredient Notes
– Croissants: No need for fancy French croissants. You can use any pre-made croissants from your supermarket deli. I like to use the mini ones or cut the larger ones in half.
– Deli meat: You could use any variety of deli meat that your family likes. We typically like a black forest ham or something of the sort. I like to tear it into pieces for a more even flavor in each bite. You could also substitute bacon or breakfast sausage.
– Cottage Cheese: I really prefer the Good Culture cottage cheese for it’s creaminess and quality ingredients, but you can use whatever brand you can find.
– Cheese: Grab a good quality shredded mozzarella or a white cheddar to really give it added depth of flavor.
– Salt, Pepper, & Italian seasoning: Don’t be afraid to season!! Salt and pepper really make your flavors come alive. Get a good quality salt and let the magic happen.

How To Make This Croissant Bake

- Prepare the baking dish. Preheat the oven to 350F. Grease a 9×13″ casserole dish.
- Add the croissants and meat. Place the croissants in the bottom of the dish, then add in the ham around the croissants. I like to tear the meat into smaller peices.
- Make the egg mixture. In a blender, combine the eggs, cottage cheese, half & half, salt, and pepper. Blend until smooth and creamy. Pour the egg mixture over the croissants and meat, then cover with the shredded cheese and sprinkle with italian seasoning.
- Bake, then serve. Bake in preheated oven for 40-45 minutes until the center is set. Let cool for a few minutes before serving.

Make-Ahead, Leftovers, & Storage
– To make-ahead: Assemble the casserole by placing the croissants and meat into the dish. You may also prepare the egg mixture ahead of time, but keep it separate to prevent the croissants from getting too soggy overnight. Assemble in the morning by pouring the egg mixture into the dish and bake as usual.
– Leftovers & Storage: Can be sealed and refrigerated for up to 3 days. Reheat in a 350F oven for 15-20 minutes or until it is warmed through.
– To freeze: Bake the whole casserole and let cool completely. Then wrap tightly and store in the freezer for up to 2 months. Thaw in the fridge overnight. Heat in a 350F oven for 30-35 minutes or until warmed through completely.

Ingredients
- 8 Mini Croissants Or 4-5 Large croissants, cut in half
- 8 oz Package of deli Ham
- 8 Large Eggs
- 1 C Cottage Cheese
- 1/4 C Half & Half Or milk of choice
- 1 tsp Salt
- 1/2 tsp Pepper
- 8 oz Shredded Mozzarella Or cheddar
- Italian Seasoning
Instructions
- Preheat the oven to 350 F. Grease a 9x13 in. casserole dish with cooking spray or butter. Place all of the croissants in the baking dish, spreading them out to fill up the dish and make the base layer. Next, place the ham in with the croissants. Spread it out evenly among the dish, I like to tuck it in between the croissants.
- Now to prepare the egg mixture crack the eggs into the blender, and add the cottage cheese, half & half, salt, and pepper. Blend until smooth and creamy. Pour the egg mixture on top of the ham and croissants evenly.
- Top the casserole with the shredded cheese, spreading it out evenly. Sprinkle desired amount of Italian Seasoning over the top. Bake for 40 minutes or until the center is set.
