Ingredients
  

For the baked oats:

  • 2 cups rolled oats
  • 1 cup milk
  • 1 cup pumpkin purée
  • cup maple syrup
  • 1 teaspoon baking powder
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 2 eggs
  • cup chia seeds

For the frosting:

  • 8 oz cream cheese softened
  • 1 teaspoon vanilla extract
  • ½ teaspoon nutmeg
  • 1 tablespoon milk
  • 1-2 tbsp maple syrup to taste
  • ½ cup powdered sugar

Instructions
 

  • Preheat the oven to 375°F and grease an 8x8 baking dish.
  • In a medium mixing bowl, combine all baked oat ingredients and stir until fully combined.
  • Pour into the prepared dish and bake for 35–40 minutes, or until the center is set and slightly golden on top.
  • While it bakes, make the frosting: combine all frosting ingredients in a stand mixer and beat until smooth and creamy.
  • Let the baked oats cool for a few minutes before spreading the frosting over the top. Slice, serve warm, and enjoy every cozy bite.

Notes

Store leftovers in the refrigerator for up to 4 days, or freeze individual slices for a quick breakfast later.
