March always feels like a little reset in my kitchen. We’re craving color, brightness, and lighter flavors — but it’s still busy, and dinner needs to be simple.
These are the five dinners I’m making on repeat this month. They’re fresh but comforting, flavorful but approachable — the kind of meals that feel elevated without being complicated.

1. Bánh Mì Rice Bowls (Fresh + Flavor-Packed)
This one is on repeat because it hits every flavor note: salty, sweet, tangy, fresh, crunchy. It feels vibrant and springy, but it’s incredibly simple.
For the Pork:
• 1 lb ground pork
• 4 green onions, sliced
• 3 cloves garlic, minced
• 1 tbsp fish sauce
• 1 tbsp sugar
Start by browning the pork, then add in the green onions and saute until tender, then add in the gralic, fish sauce, and sugar. Sauté everything together in a skillet until browned and slightly crispy around the edges. That caramelization is key.
For the Base:
• Brown rice with butter (don’t skip the butter — it rounds everything out)
Veggies:
• Shredded carrots
• Shredded cucumber
Quick Dressing:
• 2 tbsp rice vinegar
• 1 tbsp fish sauce
• 1 tsp sugar
• 1 tsp oil
• Chili flakes (optional)
Toss the carrots and cucumber with the dressing for that classic pickled bite.
Spicy Mayo: mix 1/2 a cup of mayo with 1-2 tablespoons of Siracha or another chili sauce. Add 1 tablespoon of water to thin for that perfect drizzle.
Toppings:
• Fresh cilantro
• Crushed peanut
Tip: Serve deconstructed for kids. Mine love the rice + pork + peanuts, and I add the pickled veggies to mine.

2. Sausage & Gnocchi Sheet Pan (Minimal Cleanup, Maximum Flavor)
This is my “I don’t want to think” dinner that still feels intentional.
• Italian sausage
• Gnocchi
• Sweet peppers
• Yellow onion
• Olive oil, salt, pepper
Toss everything together on a sheet pan and roast at 400°F for about 25–30 minutes, until the sausage is cooked through and the gnocchi is golden and slightly crisp.
Finish with:
• Fresh basil
• Freshly grated Parmesan
Optional add-ins:
• Zucchini
• Mozzarella
• Brussels sprouts
• Sweet potatoes
Why it works: The gnocchi roasts instead of boiling, getting crispy outside and tender inside. It’s cozy but still colorful.

3. Boursin Chicken Meatballs with Creamy Parmesan Pastina
This dinner feels restaurant-level but is secretly weeknight-friendly.
Inspired by how much I love cooking with Boursin, these meatballs are tender, flavorful, and require very little seasoning because the cheese does the work.
Boursin Chicken Meatballs
• 1 lb ground chicken
• 1 large egg
• 1 (5.2 oz) package Boursin cheese (Garlic & Herb or Shallot & Chive)
• ½ cup breadcrumbs
• Salt & black pepper
• ½ tsp dried thyme
• Dash red pepper flakes (optional)
Preheat oven to 375°F.
Mix gently, roll into 1½ tbsp meatballs, and bake for 20 minutes.

Creamy Parmesan Pastina
• 2 cups chicken broth
• 1 clove garlic
• 1 cup pastina
• ⅓ cup heavy cream
• Freshly shredded Parmesan
• Salt & pepper
Bring broth and garlic to a boil. Add pastina and simmer until tender and most liquid is absorbed. Remove garlic. Stir in cream and plenty of Parmesan.
Serve with sautéed green beans.
This one feels like a hug — simple, creamy, comforting.

4. BBQ Chicken Tostadas (Crispy + Saucy + Fun)
This is a crowd-pleaser and perfect for using shortcuts.
Ingredients:
• 2–4 chicken breasts
• 1 cup BBQ sauce
• 12 corn tortillas
• Avocado or olive oil
• 1 can refried beans
• 1 cup mozzarella cheese
• Pickled red onions
• Hot honey BBQ sauce
• Fresh cilantro
Instructions:
1. Add chicken, BBQ sauce, and ½ cup water to a crockpot. Cook on high about 3 hours, then shred. (Or use rotisserie chicken tossed in sauce.)
2. Brush tortillas lightly with oil and bake at 350°F for about 25 minutes, flipping halfway.
3. Heat refried beans.
4. Layer beans, BBQ chicken, and cheese on tortillas.
5. Bake 10 more minutes until cheese melts.
6. Finish with hot honey BBQ, pickled onions, and cilantro.
Tip: Let everyone assemble their own. It’s interactive and easy.

5. Carnitas Bowls (Meal Prep Gold)
This is one of my favorite “set it and forget it” meals.
For the Carnitas:
• Pork shoulder
• Better Goods carnitas seasoning
• Juice of one orange
Cook in the crockpot until fall-apart tender. Shred and crisp slightly in a skillet if you have time.
Build Your Bowl:
• Rice
• Black beans
• Roasted sweet potatoes
• Queso
• Fresh cilantro
It’s colorful, hearty, and perfect for leftovers.
